Bean and chickpea salad

Ingredients

1 cup of kidney beans
1 cup of chickpeas
1 large celery stalk finely diced
½ red pepper finely diced
½ green pepper finely diced
3 green onions finely diced
¼ cup of olives (black or green) chopped
2 red chili peppers (seeds removed) chopped
Juice of ½ lime
1 table spoon of Dijon mustard
1 table spoon of white wine vinegar
Salt and pepper to taste

Preparation

Add all the above ingredients in a large bowl and mix thoroughly. The beans and chickpeas can be caned or fresh, it's your decision as to which you choose to use. If you use the caned, this meal can be prepared in ten minutes.
