Sean's Mega Mini Power Muffins

Yes, you read it right; muffins!

served quinoa muffins shim.jpg These aren't like any muffins, these are grain and processed sugar free muffins; without a catch. They're high protein muffins! This recipe is however, going to encourage you to have to get used to some very different ingredients and send you on a trip to the natural health food store.

Ingredients (recipe makes 12 small muffins)

1/2 cup of cooked Quinoa (prepared in Apple juice instead of water ) click here to see how to prepare it.
2 heaping table spoons Almond flour
2 table spoons Quinoa flour

1 cup Apple juice not from concentrate, no sugar added
1 tea spoon Cinnamon powder
Egg white of one egg
1/2 banana
3 pitted dates
1/4 tea spoon Stevia What's Stevia?
1 table spoon of butter
Pinch of salt

Preparation

Cook 1/2 cup of Quinoa in 1 cup of unsweetened apple juice, cinnamon, stevia, and salt.

When the Quinoa is ready, let is partially cool. Add it to a food processor with the 1/2 banana, quinoa flour, almond flour, butter, egg whites, and dates. Blend it up well. It should be free of lumps of date and banana but not too smooth. If so add a little more almond flour.

Add the preparation to muffin tray. I use the smaller size. Bake in a preheated oven at 375 degrees for about 25-30 mins, or until the edges of the muffins turn golden. I recommend a non-stick muffin tray.

Cool completely before removing them from the tray.



I won't say that they're sugar free or very low calorie, but they are certainly a healthier choice to a muffin made with sugar and flour and are far better for diabetics.

The almond flour is simply ground almonds, and the quinoa flour is ground Quinoa. The sugar present in the quinoa muffins is from the dates and natural sugars in the apple juice and banana.
